From Mop-Head Unicorns to Meowgical Cakes: Why You Should Never Give Up

Let’s rewind four years.
I was a mom on a mission: determined to make my daughter the most magical unicorn cake ever. You know the kind — rainbow layers, swirly frosting, and a mane full of pastel glory.
What she got instead… was a creature with fondant folds that looked like a crumpled bedsheet and “hair” that resembled a mop that had seen some things. My poor unicorn looked like it had galloped through a thunderstorm *and* a toddler art project. And yes, I cried. Then laughed. Then maybe cried again.
But I didn’t quit.

Fast forward four years and I gave it another shot — this time a cat cake. The fondant stayed where it was supposed to. The ears stood up on their own. And no one confused the hair for a Swiffer. Was it perfect? Nope. But it was progress — big, beautiful, fondant-covered progress.
Baking has never come naturally to me. I’ve had to teach myself *everything* — from how to level a cake to how to stop crying when your fondant breaks. But every fail has led to a better bake. And I’m already dreaming of what my cakes will look like four years from now.
So, if you're out there thinking *“I can't bake” * — hear me out: you absolutely can. You just have to be brave enough to start, mess up, and keep going anyway. (Also: you’re not alone. Mop-unicorns unite.)
